Chipotle Oil
By Executive Chefs Piero Biondi, Whats Cooking – CRN
Sunland, California 91040-1905 & Chef Lisa Biondi (Father & Daughter Team)

Yield: 1cup

Ingredients:
4 Each Chipotle Chiles (no stems or seeds)
1 Cup Vegetable Oil

Procedure:
1. Combine chilies and oil. Heat to simmer. Continue to simmer until chilies are soft. Let cool. Puree. Reserve.
